nce upon a time, on an island nor far from Mt. Vesuvius, in the land of mozzarella, a great castle was built upon the sea. It looked across the olive orchard-covered hills and grasslands of Ischia, where buffaloes grazed – just as they do across all of Campana and Southern Italy. Their rich, volcanic soil helps buffaloes produce the proper milk for mozzarella di bufala, burrata, scamorza and other special cheeses that travel from the villages near the aragonne castle to tables around the world.
The talent to make such cheese and the rich, thick buffalo yogurt is home grown and passed down from generation to generation. We have brought it together from Ischia and other parts of the “Mezzogiorno” to offer you the best fresh Italian, organic cheeses and live-culture yogurt.
Any latteria, salumeria or deli sells a wide range of cheese, cream and yogurt to cover a creative chef’s needs. We offer a half dozen each of fresh and aged cheeses. You can find more detail here on our live-culture Yogurt, Fresh Mozzarella di Bufala, Burrata, Ricotta, Mascarpone and Aged Primo Sale, Crema Toscana, Scamorza, Appia Vecchia, Bufalino, Caciocavallo, Il Megliore Paese, Marrone di Veneto and Bufala Blues.
We offer regular seminars to give registered customers access to experienced international chefs, doctors and health experts. These sessions allow us to share both rustic European and creative Fusion recipes and serving ideas. They include wine-pairing sessions and a chance to learn how different types of cheese are made.
At each stage the flora of the culture offers a different health benefit as well as a different flavor profile that can enrich all your meals.
We screen each water buffalo’s milk daily and set feeding standards with our dairy handlers to produce the best quality milk for our products. We maintain a sterile-technique production area and the barrier controls at our plant above the standards of the Food & Drug Administration, which means that you can rely upon the product description s on the back of our packages and their use-by date.
